Gingerbread Nice Cream

It is officially Gingerbread time, the days are getting shorter, the time at home cozier. Even though christmas is still a few weeks ahead, I am already enjoying some of the best things about christmas - gingerbread and christmas spiced tea.
If you want to stay on the healthy side try this guilt-free super tasty and easy to make  gingerbread nice cream. I promise it is absolutely delicious. 

Ingredients (2 servings)
3 frozen and peeled bananas ( freeze for min 3 hours or just overnight)
125 ml oat milk
1 teaspoon of gingerbread spice
1 pinch of cinnamon
2 teaspoons chia seeds
1 pinch of maca powder

Topping: a handful of walnut kernels

put all the ingredients in a good blender and blend it until it is creamy. Serve immediately or you can even put it back in the freezer for 1 hour if you want a real ice cream experience. Sprinkle the walnut kernels on top.

Maca is one of my favorite super foods. This powder made out of a sout- american root aids our mormon system, fights chronic fatigue and increases indurence and well-being. On top the taste is really good. is  tastes good and has  I made these energy balls for students of the "Yin Flow & Gong Bath Masterclass" I taught last saturday and promised to publish the recipe - so here it is.  Quick and easy to make they give you energy for a long time and they helped us to get grounded after the high-vibe gong bath.  I hope you enjoy them.

These energy balls always make a good surprise for your friends and loved ones.

Ingredients: (makes around 12 bigger or 20 smaller energy balls)
- 250 grams walnut kernels
-10 soaked dates (take the pit out of the dates and leave them soaking in warm water for around 3 hours or even overnight)
- 4 tablespoon maca powder
-3 tablespoon  Protein Powder ( i used cacao carob protein powder but you can substitute with cacao powder if you wish)
- 2 tablespoon coconut flour
- A handful of coconut chips
-a few walnut kennels 

1. Put the soaked dates, walnut kernels with the maca powder, protein powder and coconut flour into a high-speed blender ( I use the Vitamix since years and love it). 
extra tip: Some high- speed blenders need a little extra fluid on the bottom so the motor doesn't spin and breaks, so start slow and work it up. If you have to use water in it, just add more coconut flour at the end.
2. Take the sticky dough out forming little balls with 2 spoons or with your hands. Roll them in the coconut chips. Put a walnut kernel on top if you like and place them on a tray.
3. Put the energy balls in the fridge for around 1-2 hours to give them just the right substance for that delicious bite.
